Cranberry Bread Recipe

1 c wheat bran flakes
2 c flour
1 tsp baking powder
1 c sugar
c chopped nuts
1 egg
2 Tbsp. vegetable oil
1 c orange juice
1 c halved cranberries

In large bowl, stir together wheat bran flakes, flour, baking powder, soda, salt, sugar and nuts.

In small bowl, beat egg until foamy. Add vegetable oil, orange juice, and cranberries. Add to dry ingredients and mix thoroughly. Spread evenly in well greased 9x5x3 loaf pan and cook at 325 for 1 hour and 10 minutes or until toothpick comes out clean. Let cool 10 minutes and remove from pan. Cool completely on wire rack. May also be cooked as muffins for about 25-30 min. (makes 30 muffins)
