4-1/2 lt skim milk
1/3 cup lemon juice

Directions:
Directions:
Scald milk then remove from heat. Stir the lemon juice into milk. Let it sit for at least 20 minutes. Strain to remove the liquid (whey) from the curds. Chill. Makes approximately 2 cups.
