1 and 1/2 lb. grated zucchini
1 large onion finely chopped
1/4 C. dry bread crumbs or cheese flavored crackers
2 large eggs
1/4 cup grated Parmesan cheese.

Directions:
Directions:
Drain zucchini in colander for 30 minutes. Squeeze to remove moisture. Combine all ingredients in a bowl and mix well. Ladle 1/4 cup mixture in frying pan (with 2 tsp. melted butter) and fry like potato pancakes. Turn over when brown. Sprinkle more cheese if desired. Serve with tartar sauce if desired.
