1 medium onion, diced
1 small green pepper, diced
1/4 c. olive oil
1 envelope taco seasoning mix
1 medium zucchini, diced
2 c. frozen corn
1 can black beans, drained and rinsed
1 can diced tomatoes
1/2 small can diced green chilies (use more if desired)
cooked brown rice
4 grilled chicken breasts or store-bought rotisserie chicken removed from bones and chopped

Directions:
Directions:
Saute onion and green pepper in olive oil. Add taco seasoning and stir. Add remaining ingredients, except chicken and rice, and heat through. Serve with chicken breast, or add chopped cooked chicken with other ingredients and heat through. Serve over rice.
