2 c plain flour
2 tsp cinnamon
2 c sugar
1/2 tsp salt
2 tsp soda
1 1/2 c Wesson oil
2 c finely grated carrots
4 eggs

Directions:
Directions:
Stir together flour, cinnamon, sugar, salt and soda. Add oil, carrots, and eggs one at a time, beating well after each addition. Pour into 3 greased 8" pans and bake at 350 for 20-25 minutes. Frost with cream cheese frosting.

Cream Cheese Frosting:
1 stick margarine 1 8oz cream cheese
1 box confectioners sugar 1 c chopped nuts
1 tsp vanilla

Cream all ingredients and then add the nuts. Mix thoroughly.
