1 can (6 ounces) Tuna
2 tbsp. light mayonnaise
1 tbsp. chopped pickled jalapeņo pepper
4 slices whole grain sandwich bread
2 ounces thinly sliced cheddar cheese
1/2 avocado, sliced
2 tbsp. butter

Directions:
Directions:
In a small bowl, combine tuna, mayo and jalapeņo. Set aside. Evenly top two bread slices with 1/2 of cheese, avocado and tuna mixture then remaining cheese. Top with remaining bread slices. Evenly spread tops of sandwiches with butter. In a nonstick skillet, cook sandwiches over medium heat. Spread side down, cook 2 minutes or until golden brown. Evenly spread tops with remaining butter then turn over and cook an additional two minutes or until golden brown and cheese is melted. 2 servings
