1 med. zucchini;
1 sm. egg, beaten;
3/4 c. grated cheese;
3/4 c. cooked rice;
1/4 tsp. dried oregano;
1/2 tsp. dried basil;
Salt & pepper to taste

Directions:
Preheat over to 350. Wash zucchini; slice in half lengthwise and hollow out each half with a spoon.
While rice is still warm, add egg, cheese, oregano, basil, salt and pepper. Use any kind of cheese you have around the house - Gouda, cheddar, muenster, Swiss, etc. Stuff zucchini halves with rice mixture. Bake 20 minutes.
