1/4 chopped onion
1 T. olive or veggie oil
1 C. Long grain rice
1 7oz can diced green chilies
2 C. chicken broth
1/4 C. coarsely chopped parsley
3/4 tsp. garlic salt
1/2 tsp pepper
1/2 C. grated Monterey jack cheese

Directions:
Directions:
Saute onion in oil until tender, add rice. Stir until grains coated with oil. ADd chiles, chicken broth, parsley, garlic salt and pepper. Bring to a boil. Reduce heat to low and cover. Cook 20 minutes or until all liquid is absorbed and rice is tender. Stir in cheese. Let stand 1 minute covered before serving.
