"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Granola Bars, by Shirley Zens, is from The 2009 Zens Family Favorites,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1/4 cup butter 1/4 cup vegetable oil 1 1/2 pounds marshmallows 1/4 cup honey 1/4 cup peanut butter 5 cups oatmeal 4 1/2 cup rice krispies 1 pkg. crushed graham cracker 1 cup crushed peanuts 1/2 cup mini chocolate chips (optional) 1 cup of coconut 1 cup raisins 1 cup each of dried apples, crasins or any other dried fruit you may enjoy.
Melt butter, vegetable oil, and marshmallows. Then add honey and peanut butter. Mix the remaining ingredients in a large bowl. Pour marshmallow mixture over that. Work mixture together with a spoon first, until cool enough to work with hands. Once mixed well. Put in a cookie sheet with wax paper and press together firmly. VERY PACKED FIRMLY. Once it's packed cut into 1 1/2 X 2 inches. Can be frozen or left out.
Have kids that have even tried stepping on it to make sure it was packed tight enough.
