¼ cup butter
½ pound fresh mushrooms, sliced
1/3 cup finely chopped onion
1 garlic clove, minced
1 T fresh lemon juice
3 T flour
4 cups chicken broth (or 4 chicken bouillon cubes)
2 tsp salt
¼ tsp ground black pepper
2 cups heavy cream (for rich soup) or 2 cups evaporated milk, half and half, or milk and cream
chopped fresh parsley

Directions:
Directions:
Heat butter and sauté’ mushrooms, onions, and garlic, for 4-5 minutes, stirring constantly. Sprinkle with lemon juice. Blend in the flour. Gradually stir in chicken broth, salt and pepper. Cook, stirring occasionally, until mixture is slightly thickened. Stir in the cream and heat thoroughly. Sprinkle with parsley and serve. Serves 8.
