Vanilla or Cream Cheese Flan Recipe

5 whole eggs
1/2 package cream cheese
1 can evaporated milk
1 can condensed milk
1 tsp vanilla extract
3/4 cup sugar for the caramel

Directions:
Directions:
Take the sugar and caramelize it in a small sauce pan. Do not let the sugar burn, it should be a golden caramel color. Pour this caramel into an 8-inch round dish. Make sure to coat the bottom and the sides of the pan.

Place all other ingredients in a blender and mix until it has a smooth consistency. Pour into the caramel filled pan. Place pan in "bano de Maria", which is a larger pan that has been filled with an inch or two of water. Place the larger pan with flan pan in it in the oven at 350 for about 45 minutes.

You can check the flan by poking it in the center with a knife. If the knife comes out clean then the flan is done.

I usually add a little more vanilla and a little more sugar and 1/4 cup of regular milk to the mixture. (AJ)
