3 apples, med-large, pared and sliced
3 level tsp. cinnamon
5 T. sugar
4 eggs
2 c. sugar
3 c. flour
3 tsp. baking powder
3/4 c. oil
1/4 c. orange juice
2 1/2 tsp. vanilla

Directions:
Directions:
Mix sugar and cinnamon in separate bowl, stir in apples. Mix oil, orange juice and vanilla in a small bowl. In a large bowl, beat eggs until thick and creamy, add sugar gradually. Add dry ingredients alternately with liquid. Put half of batter in greased tube pan, cover with half the apple mixture. Add remaining batter, top with remaining apples. Bake 1 hr., 10 minutes at 350.

A VERY GOOD cake. I use unbleached flour that contains 9 grams of whole grain per serving (trying to be healthy).
