1 tsp. lemon zest
1/2 cup lemon juice
1/2 cup olive oil (less if desired)
1 tsp. fresh dill-chopped
1 tsp. minced garlic
1/2 tsp kosher salt
1 cup orzo (cooked until tender)
2 oz feta cheese crumbled
3/4 cup red pepper diced
1/3 cup pitted kalmata olives
2 T. scallions sliced
11/2 tsp. fresh oregano

Directions:
Directions:
Mix lemon zest, juice, olive oil, dill, garlic and kosher salt, set aside.
Mix all other ingredients and add lemon mixture. Let stand for a few hours in refrigerator.
