3/4 c. butter
3 tbsp. brown sugar
2-1/2 c. crushed large pretzels
1 large pkg. of strawberry Jello
2 c. boiling water
3 c. chilled strawberries, roughly chopped
1 8-oz. pkg. cream cheese
1 scant c. white sugar
1 8-oz. container Cool Whip

Directions:
Directions:
Combine butter, brown sugar and pretzels, and pat into bottom of a buttered 9"x13" pan. Bake at 350 for 10 minutes. Dissolve Jello in hot water and add strawberries after Jello begins to cool. Continue cooling mixture until it begins to set. Blend together cream cheese and sugar, then fold in Cool Whip and spread over cool crust. When Jello mixture begins to set, pour it over top of cheese mixture and refrigerate until firm.

This recipe was given to me years ago by my friend, Jo Gilbert. "Scant" is a word used by us Southerners, and it means "almost, but not quite."
