1/2 cup butter or margarine, softened
1 cup sugar
1 egg
1 cup unsweetened applesauce
1-1/2 tsp cinnamon
1 tsp allspice
1/2 tsp ground cloves
1/2 tsp salt
1 tsp baking soda
2 cups flour

Directions:
Directions:
Preheat oven to 350. Spray mini-muffin tin (makes 24) with cooking spray.

Cream butter and sugar. Mix in egg. Stir in applesauce and spices. Sift together salt, soda and flour. Add to applesauce mixture and beat well.

Fill muffin tins 2/3 full and bake for 8 - 10 minutes.

Batter keeps well in refrigerator and baked muffins freeze well (reheat before serving).

When Alex was 3 or 4 he had these at a friend's house and LOVED the "Adam Puffcakes." Years later, Martha Comfort, the Oskaloosa Cross Country coach's wife, uses this recipe to make muffins for Friday Fun Day. Still a favorite.
