1 c. salt
1/2 cup brown sugar
1 gallon vegetable stock
1 tbsp black pepper
1 gallon ice water

Directions:
Directions:
Combine all ingredients except ice water and bring to a boil stir to dissolve the salt and sugar. Remove from heat and cool to room temperature. Refrigerate overnight. Place mixture into a clean cooler and add ice water. Place turkey into mixture and cover tightly. Allow to soak for a least 6-8 hours before cooking turkey.

The bird will absorb all the flavors as it soaks by osmosis. I also use a Styrofoam cooler so I can throw it away when I'm done soaking my turkey.
