3 cups diced cooked chicken
1 6ounce package long grain and wild rice mix, cooked as directed and cooled
1 cup chopped pineapple
3/4 cup chopped celery
1/3 cups sliced almonds, toasted
1/3 cup chopped red pepper
2 tablespoons chopped scallions
1/2 cup vegetable oil
1/4 cup wine vinegar
2/4 cup Gray Poupon Dijon Mustard
1/8 teaspoon ginger

Directions:
Directions:
In non metal bowl, combine chicken, rice, pineapple, celery, red pepper, and scallions; set aside. In a small bowl, whisk oil, vinegar, mustard, and ginger until smooth. Stir into chicken mixture until well coated. Cover and chill several hours to blend flavors.
