3 ounces Caster sugar (fine sugar)
few drops of lemon essence
3/4 level teaspoon salt
12 ounces milk
8 ounces self-rising flour
1 ounce melted fat or 1 tablespoon cooking oil

Directions:
Directions:
Beat the egg, sugar, lemon essence, salt and half the mild together. Blend in the flour gradually and beat to a smooth batter. Add the rest of the milk. Stir in the melted fat or oil. Well heat a greased hot plate or griddle (it must be hotter than for pancakes), drop by spoonfuls of batter onto the hot plate or griddle until the crumpets are beginning to bubble. When the bubbles burst, turn the crumpets with a spatula and cook on the other side.
