3 TBSP CORNSTARCH
1/4 TSP SALT
2 C MILK
3 EGG YOLKS SLIGHTLY BEATEN
2 TBSP BUTTER
1 TSP VANILLA

Directions:
Directions:
COMBINE SUGAR, CORNSTARCH, SALT; MIX; GRADUALLY STIR IN MILK. COOK AND STIR OVER MEDIUM HEAT TILL BUBBLY AND THICK.
REMOVE FROM HEAT. STIR A SMALL AMOUNT OF MIXTURE INTO EGG YOLKS; IMMEDIATELY RETURN TO HOT MIXTURE; COOK 2 MINUTES, STIRRING CONSTANTLY. REMOVE FROM HEAT; STIR IN BUTTER AND VANILLA.
MAKES ENOUGH FOR 1 PIE IF USING DEEP DISH DOUBLE. SLICE 3 BANANAS INTO COOLED BAKED 9 INCH PIE SHELL. TOP WITH VANILLA FILLING. TOP WITH MERINGUE.
MERINGUE:
3 egg whites
6 tbsp. sugar
1/2 tsp. cream of tarter
Beat egg whites until frothy. Slowly add the sugar and crm tarter. Beat until stiff. Spread pie and bake at 425 degrees for 5 minutes or until meringue is lightly brown.
