1/2 lb. large shrimp, raw and peeled
2 T. olive oil
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dried oregano
1/2 tsp. Old Bay
1/4 tsp. paprika
3 T. apricot preserves
1/4 tsp. red pepper flakes
2 T. fresh parsley, chopped
1 T. orange zest, grated
squeeze of fresh orange

Directions:
Directions:
Toss peeled shrimp with olive oil. Toss with the salt, pepper, oregano, Old Bay, and paprika. Place shrimp on skewers. Set aside.

Place all other ingredients in a large bowl and mix well. Set bowl beside the grill.

Grill shrimp over high heat for 1-2 minutes on each side. When shrimp are done, remove from skewers and put directly into the bowl with the apricot preserves mixture. Stir until shrimp are well-coated.

Serve as a main dish over rice pilaf, or as an appetizer or salad topper.
