Beef Stroganoff Recipe

1 lb. beef sirloin – cut against the grain into ¼ x 1” strips/pieces
2 tbs. butter
1 cup sliced fresh mushrooms
½ cup sliced onion
2 cloves garlic – minced fine
3 tbs. flour
3 tbs butter
Salt, pepper, worcestershire sauce, celery salt,
(These are all optional except salt and pepper)
1 small tomato chopped small
1 10oz tin beef bouillon
1 cup sour cream
2 tbs sherry or white wine

Brown the sliced meat quickly in a hot skillet, when nicely brown put into a casserole dish. Reduce heat and add: mushrooms and cook for 4-5 mins then add: onion and garlic (add more butter if necessary). Cook until onion in clear, remove from pan and add this to the casserole dish with the meat.
Now make the sauce:
In same pan – (all the brown goodies are still in the pan) melt the 3 tbs butter and add the flour salt and pepper; then stir in the beef bouillon and cook until thickened. Add to casserole dish. Add wine or sherry. Now put in a 320 degree oven and cook for 3/4 hr until meat is tender. Just before serving add the sour cream until warmed through, taste and adjust seasonings. Don’t let mixture boil as it will curdle. Sprinkle with dill.
Enjoy with egg noodles and a green veggie. 
