Cake:

2 cups sugar
1 cup oil
3 eggs
2 1/2 cups flour
1 tsp. salt
1 tsp. soda
2 tsp. vanilla
2 cups grated carrots
1-20 oz. can crushed pineapple
1 cup chopped nuts (optional)
1 cup raisins (optional)
2 tsp. cinnamon
Cream Cheese Icing:

1-8oz. pkg. cream cheese
1 cube butter
2 to 4 cups powdered sugar
2 tsp. vanilla

Cake:
Cream sugar and oil. Add eggs and mix. Add dry ingredients and mix in. Blend in vanilla, carrots, pineapple, and nuts. Bake in greased 9 x 13 pan at 325 for 45 minutes. When cooled, frost with Cream Cheese Icing. Soften cream cheese and butter and cream together. Add the powdered sugar and the vanilla. Beat until smooth. Spread on cooled cake.
