1 broiler/fryer chicken (3-4 lbs)
1 medium potato, cut into 1/2" pieces
1 medium onion, cut into wedges
2 medium carrots, peeled and cut into 1/2" slices
1 garlic clove, minced
1 tbsp olive oil
1/2 tsp dried rosemary leaves
1/2 tsp dried thyme leaves
salt and pepper
1/2 c water

Directions:
Directions:
Preheat oven to 400. Rinse chicken in cold water; pat dry. Place in a roasting pan, breast side up. Arrange vegetables around it. Combine garlic, oil, herbs, salt, and pepper in bowl; brush over chicken. Pour water over vegetables and cover. Bake for 1 hour 15 minutes. Uncover last 15 minutes of baking. Let stand 10 minutes before carving.
