2 tablespoons flour
1 1/2 teaspoons salt
1/4 teaspoon baking powder
1/8 teaspoon pepper
3 cups (2 lbs.) grated raw potatoes
1 apple, cored and grated
2 eggs, well beaten
2 tablespoons onion, chopped
1 tablespoon fresh parsley, minced
(or 1 teaspoon dried)
Vegetable oil for cooking

Directions:
Directions:
Stir flour, salt, baking powder and pepper together; set aside. Wash, pare/core and finely grate potatoes and apple; set aside. Add eggs, onion and parsley to flour mixture. Drain potatoes and apple and press between paper towels to remove as much water as possible. Add potatoes and apple to flour mixture and mix thoroughly. Heat enough vegetable oil to cover bottom of skillet. Drop 2 tablespoons batter into oil for each pancake, leaving 1-inch space between them. Drain on paper towels. Keep warm in the oven at 200 until all are cooked.
