5 lbs sweet potatoes or yams
zest and juice of 2 oranges
8oz. orange marmalade
2 sticks unsalted butter
salt to taste
20 ginger snap cookies

Directions:
Directions:
preheat oven 375 degrees. Bake potatoes on a sheet pan until tender. let stand until just cool enough to handle. Remove skins and mash well with butter. Add zest, orange juice and marmalade. This can be done a day ahead. Put mixture into oven proof dish and cover with plastic wrap and refrigerate. Topping: pulverize 20 ginger snaps in food processor or blender. Add the other stick of butter and mix well. Remove mixture into a 12 in. square of plastic wrap and form a log, roll it up, twist the ends and refrigerate. To serve: preheat oven to 375 degrees. Let potato mixture come up to room temperature, place in oven on a cookie sheet or pan, about 35-40 minutes. Take ginger butter log from fridge, remove plastic wrap and slice into 1/4 in. rounds, place on top of potatoes to cover the entire dish. Return to oven just long enough for topping to melt. Remove and serve.
