2 (15 oz) cans chick-peas, drained (3 cups cooked)
3/4 cup low-fat mayonnaise or Tofu Mayonnaise
2/3 cup minced celery
1/3 cup minced dill pickle (or add a little dillweed if you have no pickles)
1/4 cup nutritional yeast flakes
2 green onions, chopped
2 tsp soy sauce
1 tsp kelp powder
1/2 tsp salt or 1 tbsp light soy or chick-pea miso
pepper, to taste

In a medium bowl, mash the chick-peas coarsely with a fork. Mix in the remaining ingredients, using 1/2 cup of mayonnaise at first, and then adding more as needed. (You don't want your mixture to be too "gloppy") Cover and refrigerate. Use on sandwiches or on a bed of salad greens.

**VEGAN RECIPE**

Make sure your chick-peas are not cooked to a very soft stage for this recipe - canned chick-peas are perfect.
