2 cups bread flour
2/3 cups turbinado sugar
2 1/2 tsp baking powder
1/2 tsp sea salt
1 cup soymilk
1/2 cups soy margarine
1 cup blueberries, frozen or fresh

Directions:
Directions:
Pre-heat oven to 400. Mix dry ingredients. Add soy margarine and soymilk then 1 cup of blueberries. Spray muffin pans or use baking cups. Fill cups 3/4 of the way with mixture and bake for 20 - 25 minutes.

**VEGAN RECIPE**

Banana Nut Muffins: replace blueberries with 1 mashed banana and 1 cup of chopped walnuts.
