1 3-pound boneless pork shoulder roast
2 cups brown sugar, divided
1 tsp ginger
1 tsp oregano
1 tsp chili powder
1 tsp Kosher salt
1 cup worcestershire sauce
1 (10 oz) can enchilada sauce

Directions:
Directions:
In the morning, rinse the roast in cool water and then place in the bottom of a crockpot. Cover with 1 cup brown sugar (save the other cup for later), ginger, oregano, chili powder, Kosher salt and worcestershire sauce. Cook on low heat for 7-8 hours or until the meat shreds easily with a fork. About an hour before you're ready to serve, add remaining cup of brown sugar and the enchilada sauce.
