4 boneless, skinless chicken breast halves
2 T. fajita seasoning or chili powder
2 T. olive oil
1 jar (9 oz.) prepared mango chutney OR peach preserves
3/4 to 1 c. dry white wine, apple juice, or cranapple juice
1 to 2 lb. sliced fresh white mushrooms
1/2 c. chopped fresh cilantro (optional)

On a work surface between 2 pieces of waxed paper, pound chicken to 1/4 inch thickness. Sprinkle with fajita seasoning, coating completely. In a large skillet, heat oil over medium-high heat. Saute chicken 5 to 7 minutes, turning once and cooking until golden on both sides and no pink remains. Remove chicken to platter and cover to keep warm. In the same skillet, combine the preserves and wine; heat for 5 minutes. Add mushrooms and cook for 8 to 10 minutes, until mushrooms are tender and glazed, stirring occasionally. Spoon over chicken and garnish with cilantro.
