3 c. chopped potatoes
1/2 c. chopped celery
1/2 c. chopped onion
1/4 c. grated carrot
1 1/2 c. chicken broth
1/4 tsp. salt
3 slices bacon (or 1/4 c. diced ham)
2 c. milk, divided
8 oz. sour cream
1 T. flour

Directions:
Directions:
Combine vegetables, broth, and salt; cook until tender. Fry bacon until crisp then crumble it. Add 1 cup milk to vegetables and heat. Blend sour cream and flour then gradually stir in remaining 1 cup of milk. Add a third of the hot potato mixture into the sour cream mixture and stir. Add bacon and return all to potato mixture. Warm until soup thickens.
