4 cups coarsely grated zucchini
3 c flour
2 1/2 c sugar
1 1/4 c vegetable oil
4 eggs
4 tsp's. vanilla
1 tbls. cinnamon
1 1/2 tsp salt
1 1/2 tsp.baking soda
1/2 tsp. baking powder
1 cup chopped walnuts

Directions:

Mix all ingredients on low speed until well mixed.
Pour into 2 greased loaf pans. Bake at 325 60-75 mins.
