2 Porterhouse steaks or 4 lbs NY Strip steaks, 2 to 2-1/2 inches thick, at room temperature
Salt
2 T. rosemary leaves, fresh are best
1/4 c. extra virgin olive oil

Directions:
Directions:
Preheat grill on medium high heat.

Season both sides of steaks generously with salt.

Put steaks on grill, close cover, and grill for 8 minutes. Flip steaks and grill for another 6-7 minutes. The steak may be charred on the outside but rare inside.

Transfer steaks to cutting board and let rest for 5 minutes. If necessary, cut steaks off bones. Thinly slice steaks. Lay meat on a platter and sprinkle with rosemary leaves.

Heat the olive oil in a small pot over high heat until just smoking, about 2 minutes. Carefully drizzle hot oil over the steaks & serve.
