1- Mrs. Edwards Key Lime Pie
1/2 gallon vanilla ice cream
2 bags frozen grated coconut

Directions:
Directions:
Allow pie and ice cream to soften to a mixing consistency. Break up pie in a large bowl and fold in softened ice cream. Place mixture in freezer and refreeze. Pour coconut into a large skillet and brown on medium heat; stirring often. (This burns easily)
Remove frozen ice cream mixture, form into tennis ball size balls and roll in browned coconut. If mixture begins to thaw, return to freezer to harden.
Place finished balls in freezer until ready to serve.
