3 Cups Sugar
4 Cups flour
1 Tbsp. baking powder
6 eggs
1 lb. butter (not margarine)

3 jars of Marichino Cherries
1 #2 can of crushed pineapple
2 cups sugar
1 lb. chopped pecans
1 oz. lemon extract

Directions:
Directions:
Mix the flour, 3 cups sugar, baking powder, eggs, and butter.
Chop the cherries and add to mixture. Candy the crushed pineapple in 2 cups sugar, simmering until thick. Add the lemon extract and pecans.

Bake at 275 for 3 hours; makes 1 large or two small fruitcakes.

I've kept this in my recipe box for over 35 years. One holiday season Faye Poole heard me remark that I disliked Fruit Cake....... the next day she came to work with a smile, a written recipe for me, and a challenge..... "try it.....
