1 lb boneless skinless chicken
1 can Rotel diced tomatoes and chilis
1 can cream of chicken soup
3 to 4 cans chicken broth
2 small cans diced jalapeņo peppers
garlic to taste
cilantro to taste

Directions:
Directions:
Add all ingredients to crockpot and let cook all day. Before serving, remove chicken and dice or shred. Return chicken to crock pot.
Serve buffet style with sticky rice, shredded cheddar cheese, sour cream, and tortilla chips.

The best part of this recipe is that the chicken does not have to be thawed! It works with frozen chicken as well.
