4 -6 cups of thickly shredded green papaya in long strips
4 to 5 chopped Thai chili peppers
5 garlic cloves minced
6 cherry tomatoes cut up
Juice of pulp of 1 or 2 limes in separate bowls.
unsalted chopped peanuts

Tamarind sauce (Asian store)

For each batch add About 2 handfuls of papaya.
1 to 2 tbsp of fish sauce, 1 tbsp sugar & Tamarind sauce, (1/2 tsp each shrimp & crab paste .This is very strong, I do not use it.)

Add some garlic and peppers to taste, in a large pestle & Mortar, crush to mix flavors. Add 1 cup papaya, and crush, add 1 tbsp fish sauce, tamarind sauce, sugar, lime juice, peanuts and slices of tomato crush together until mixed together or to taste. Papaya should remain somewhat crunchy, not mushy.

Pestle and mortar work best to get the most and traditional flavors. Could be gently pulsed in a food processor. Great on a hot summer's day.
