4 boned chicken breasts cut into strips
1 tbsp. cornstarch
1 tbsp. dry sherry
1 tbsp. soy sauce
1 tbsp. vegetable oil
1/2 lb. mushrooms sliced
2 1/2 tbsp. Hoisin Sauce
1/4 cup cashews

Directions:
Directions:
Sprinkle chicken strips with cornstarch, dry sherry and soy sauce. Toss to coat well and set aside.

Stir-fry mushrooms in oil for 1-2 minutes and set aside. Stir-fry chicken 2-3 minutes (until done) and then add in Hoisin sauce, mushrooms and cashews. Reheat and stir briefly. Serve at once.
