2 cups sugar
2 sticks softened butter or margarine
1 container (15 oz) ricotta cheese
2 teaspoons vanilla extract
2 large eggs
4 cups all-purpose flour
2 Tblsp. Baking powder
1 teaspoon salt
Icing & Sprinkles (optional): confectioners sugar & milk

Directions:
Preheat oven to 350*. In large bowl, with mixer at low speed, beat sugar and butter until blended. Increase speed to high; beat about 5 minutes until light and fluffy. At medium speed, beat in ricotta, vanilla and eggs until well combined. Reduce speed to low. Add flour, baking powder and salt; beat until dough forms. Drop dough by tablespoons about 2 inches apart onto a large ungreased cookie sheet. Bake about 15 minutes or until cookies are very lightly golden. Cookies should be SOFT. Remove with spatula to a cooling rack. Makes about 6 dozen. --------

Icing & Sprinkles (optional):

Stir 1 ½ cups confectioners sugar with 3 Tblsp milk until smooth. Once cookies are cool, ice and decorate with colored sugar crystals.
