2 tbsp margarine or butter
2/3 c packed brown sugar
20 oz can of crushed pineapple
2 2/3 c all purpose flour
1 1/3 c sugar
4 tsp baking powder
1 1/3 c milk
1/2 c butter or margarine
2 eggs
2 tsp vanilla

Directions:
Directions:
Melt butter and stir in sugar and 2 tbsp water and spread evenly over pan with pineapple. (do not drain). Prepare batter by combining flour, sugar and baking powder in a large bowl. Add milk, butter, egg and vanilla. Beat with electric mixer on low speed until combined. Beat on medium speed for 1 minute. Pour batter over pineapple mixture and bake at 350 for 25-30 minutes or until toothpick comes out clean. Cool on wire rack for 5 minutes and invert on plate serve warm.
