4 flour tortillas
4 T. chipotle cream sauce
Precooked chicken pieces
Shredded cheese
Green onions
Vegetable oil
Sour cream
Salsa
Shredded lettuce

Directions:
Directions:
Brush a thin sheen of oil (Pam works) on one side of each tortilla. Put one tortilla in an electric frying pan (I used this to control the heat better), oil side down. Spread 2 tablespoons of the chipotle sauce around the tortilla. Add the chicken, green onion, and cheese in amounts to your liking. Place the second tortilla on top, oil side up. Fry until the cheese really starts to melt (thereby holding everything together before turning). I fried each side about 4-5 minutes at 300-350 degrees. Do the second quesadilla the same way. You can keep the first one warm in a very low oven. Then cut them like a pizza. Serve with sour cream, lettuce, and/or salsa on the side.

I have quesadillas often when going out to eat and wanted to learn how to make them myself. I looked at a few recipes online and cobbled this one together from several I found. I like them because they are easy to make and easy to vary - a different cheese, a different meat (or no meat), without sauce or a different one, with tomatoes, etc.
