20 oz crushed pineapple (drained)
small box vanilla instant pudding
1 teaspoon lemon juice
1 deep dish pie shell
1 regular pie crust for top

Directions:
Directions:
Combine pineapple, pudding, and lemon juice until blended. Prick bottom crust. Pour in mixture. Place top crust and crimp. Bake at 350 approximately 20 minutes or until golden brown. Cool.
Note: can add coconut to filling for variation
