20 oz crushed pineapple (drained) small box vanilla instant pudding 1 teaspoon lemon juice 1 deep dish pie shell 1 regular pie crust for top
Combine pineapple, pudding, and lemon juice until blended. Prick bottom crust. Pour in mixture. Place top crust and crimp. Bake at 350 º approximately 20 minutes or until golden brown. Cool. Note: can add coconut to filling for variation
