1 pound ground beef, 85% lean
2 yellow squash sliced thin
1/2 onion minced
1 large carrot chopped small
1 box frozen chopped spinach (defrosted and drained)
1 tbsp olive oil
2 cloves chopped garlic
Grated Parmesan cheese
Red mashed potatoes
1 can beef broth
1 tbsp flour
salt, pepper, and garlic salt

Directions:
Directions:
Preheat oven to 375. In a large skillet, saute onion until translucent. Once onion is translucent, add ground beef and garlic and saute until ground beef is cooked but not browned. Season with garlic salt and pepper. Add carrots, spinach and cook for about 5 minutes. Add one can beef broth and flour. stir occasionally for 5 minutes. Turn off and set aside.

In a medium sized Pyrex, spray Pyrex. Put a layer of squash on the bottom of the Pyrex. Cover squash with meat mixture. Cover meat mixture with red mashed potatoes and spread the potatoes evenly. Cover potatoes with layer of squash. Finish with Parmesan cheese, salt and pepper. Cook in oven for 30 minutes or until top is browned and meat mixture is bubbling.
