2 lbs. uncooked halibut
1 tsp. salt
1 1/4 cup grated Parmesan cheese
1/2 cup salad oil (any light, mild oil will work)
1 clove of garlic, minced
1 cup bread or cracker crumbs (panko would be good too!)

Directions:
Directions:
Cut fish into single fillets if necessary. Combine oil, salt and garlic. Immerse fish in oil mixture for 10 minutes to marinate. Remove from oil, drain, and roll in grated cheese. Roll in the bread crumbs and place on a baking sheet in a single layer. Bake at 450 for 12 minutes or until fish flakes easily when tested with a fork. Sprinkle with parsley flakes and serve.
