1-1/2 c. sugar
2/3 c. butter
2 eggs (separated)
2 c. all purpose flour
1 tsp. baking soda
4 T. buttermilk
1 c. mashed bananas (about 2)
1 tsp. vanilla
1 c. chopped nuts

Directions:
Directions:
Mix sugar and butter together until creamy. Next, add egg yolks and beat these in. Add buttermilk. Beat egg whites and add to mixture. Mix in bananas. Add flour and soda mixture gradually, mixing well. Add vanilla, blend into batter. Stir in nuts. Bake at 350 for 20-30 minutes. Check for doneness in the middle of each loaf with a toothpick.
