2 c. flour
4 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
2 tbsp. butter
2 tbsp. shortening
1 c. buttermilk, chilled

Directions:
Directions:
Combine and sift dry ingredients together. Rub butter and shortening into dry ingredients until it looks like crumbs. Make a well in the center. Pour in buttermilk; stir just until dough comes together. Turn out on board. Dust with flour and gently fold dough over itself 5 or 6 times. Press into 1" thick round. Cut out biscuits with 2" cutter. Be sure to press straight down. Place biscuits on sheet pan so they just touch. Reform leftover dough working it as little as possible. Cut 2d batch. (They will not be as light as 1st batch). Bake 15-20 min. in 450 preheated oven.

"Bikits" was the word my children used for these southern charmers. I still can't get the hang of rolling them out to be cut. Where I was raised they were always dropped from a large spoon. Made more nooks and crannies that way.
