1/4 C oil
1 1/2 C chopped onions
3/4 C shredded carrots
2 1/4 C dried lentils
1/2 C chopped celery leaves
1/3 C plus 1 TBS tomato paste
2 tsp salt
6 3/4 C water or vegetable juice
2 C Uncle Bens converted rice

Directions:
Directions:
Cook onion in oil until translucent and tender

Add carrots to onions, cook 2 or 3 minutes more

Add lentils, celery leave, tomato paste, salt and water or veg juice to pressure cooker. Cook without rack for 20 minutes. Turn off burner and leave lentils undisturbed. DO NOT release pressure. In 20 more minutes pressure will be released and lentils will be fully cooked.

NOTE: Never fill pressure cooker more than 2/3 full.

Prepare rice according to package directions. When ready, mix hot rice into the lentils. Serve at once. Ketchup may be added on each serving.

Proportions:
-- For every cup of lentils, use 3 cups of liquid.
-- For every cup of rice, use 2 cups of liquid.
