1 1/2 lbs ground beef,
1 chopped onion,
1 can red enchilada sauce ( I prefer Old El Paso),
1 can tomato soup,
1 can cream of potato soup,
1 pkg shredded taco cheese,
1 pkg taco soft taco shells

Directions:
Directions:
Preheat oven to 350. Brown ground beef and chopped onion. While the meat and onion are browning, mix the soups and enchilada sauce in a sauce pan and simmer until well mixed.

Add cooked meat to a taco shell. Top with a spoonful of sauce and shredded cheese. Roll up and place in a 13 x 9 baking pan. Continue to do this with the remainder of the ingredients. When finished top all of the rolled up enchiladas with the remainder of the sauce and cheese. Bake for 20 minutes.

Also good if you substitute the ground beef with shredded chicken and the cream of potato soup with cream of chicken soup.

This is a favorite meal from my childhood that my mother always cooked for us and I have continued to make for my family. My son always requests my enchiladas for his birthday dinner.
