Filet 4-5 lbs of fish
1 cup salt
4-6 cups vinegar
1 1/2 cups sugar
1 tsp whole all spice
3 bay leaves
2 tsp mustard seed
3 broken up dry red peppers
1 Fresh Onion

Directions:
Directions:
Mix 1 cup of salt with 4 cups of cold water - add fish and soak for 48 hours.
Rinse, then soak fish in white vinegar for 24 hours,
drain. In large pan, add the following and bring to boil: 2 cups vinegar, sugar, all spice, bay leaves. mustard seed, red peppers.
Cut fish into small pieces and pack in jars with fresh onion slices. Pour cooked mixture over fish and refrigerate.

Keep refrigerated.
