20 Ripe tomatoes
3-4 garlic cloves
1 tsp garlic salt
Cilantro
Oregano / Italian Seasoning
3 bell peppers(mixed colors if you have them)
4-5 Jalapeņo Peppers
Hot Peppers(add to your taste)
1 large onion
1/2 cup red wine vinegar
1/2 cup brown sugar
1 12 oz can tomato paste

Directions:
Directions:
Blanch the tomatoes and remove the skin. Then blend or chop them according to your preference(I use the blender - just for a quick turn though)
Add tomatoes to a big stock pot.
Cut up all peppers into small pieces(wear rubber gloves) and then add them to the pot.
Cut up onion into small pieces and add to the pot
Chop cilantro and add to pot. - you can add this to taste, but I typically add 1/4 cup of chopped fresh.
Use garlic press to add garlic cloves to pot.
Add the remaining ingredients and simmer the entire pot for 2 hours. After an hour, taste it and add more/less of any seasoning to your taste.
Wash canning jars and lids and add hot salsa to jars until they are almost full. Screw lids on tight, then turn upside down on counter. This will seal the jar and you will not have to use a canning kettle.

I never make this the same way twice because the amount of tomatoes and peppers is variable, but it is always very good!
