5 cans (28 oz. ea.) tomatoes
2 cans (8 oz. ea.) tomato paste
2 T. Sweet Basil
4 cloves garlic, chopped
1 T. olive oil
1 T. butter
Salt

Meatballs:
3 lbs. ground chuck
1 lb. ground pork
3 cloves garlic, finely chopped
1 T. Sweet Basil
2 T. chopped fresh parsley
2 T. orange rind, finely grated
Salt and Pepper to taste
2 T. Worcestershire sauce
1 egg

Seed the tomatoes. Strain the juice and reserve. Chop the tomatoes coarsely with a knife. Heat oil and butter in a large heavy pot and brown garlic lightly. Simmer 2 hours over low heat, stirring every 10 minutes or so. Add the browned meatballs the last 45 minutes. Salt to taste. Test the sauce by placing a tablespoon of it on a plate. If water separates from the main body of the sauce, continue to simmer the sauce until this doesn't happen. The sauce is best if you can make it the day before serving or at least several hours before dinner.

Meatballs:
In a large mixing bowl, break the chuck and pork into chunks. Sprinkle all the other ingredients over the meat. Blend well by hand. Form 2-inch diameter meatballs. Brown in a skillet over medium high heat. Add to the simmering tomato sauce for at least 45 minutes.

Cook one pound of spaghetti. I always use vermicelli because the thinner noodles hold the sauce better.
